How to Make Nigerian Ewa Agoyin (Beans with Sauce)

1 teaspoon ground crayfish

Step-by-Step Preparation


1. Prepare the Beans

1. Wash the beans: Rinse the beans thoroughly to remove dirt and stones.

2. Cook the beans: Place the beans in a pot with enough water to cover them. Boil until soft, adding more water as needed.

3. Mash the beans: Once cooked, mash the beans lightly with a wooden spoon or a masher. Set aside.


2. Prepare the Agoyin Sauce

1. Soak the dried chilies: Place the dried chilies in warm water and soak for 10–15 minutes to soften.

2. Blend the peppers: Blend the soaked chilies and red bell peppers into a rough paste. Avoid making it too smooth.

3. Heat the palm oil: In a pan, heat the palm oil on medium heat until it becomes smoky. Be careful not to overheat.

4. Sauté the onions: Add the sliced onions to the hot oil and fry until golden brown.

5. Add the pepper paste: Pour the blended pepper paste into the oil and stir well. Reduce the heat to low.

6. Season the sauce: Add ground crayfish, salt, and a seasoning cube (if using). Allow the sauce to cook for 10–15 minutes, stirring occasionally until it darkens and becomes thick.
